Coconut sugar is a sustainable produce that is gentler to the environment. It can be harvested multiple times daily (compared to twice a year for cane sugar, which also requires intense land preparation), as it easily replenishes itself hours after being tapped. It does not require chemical fertilizers and can grow almost anywhere - even on sand. Coconut trees are abundant in the tropical country of the Philippines.
